Dishes to Share Alongside Your Naengmyeon

Seogwanmyeonog Naengmyeon Lab

A bowl of Pyeongyang Naengmyeon is enough on its own, but Seogwanmyeonog also has dishes made for sharing beside it, from Hanwoo (Korean beef) Suyuk to Hanwoo Yukhoe, Dotjeyuk, Chilled Suyuk with Vinegar Dressing, mandu and a seasonal pancake. Add one or two, then close with naengmyeon.

A bowl of Pyeongyang Naengmyeon is enough on its own, but Seogwanmyeonog has a range of dishes made for sharing beside it. From mild Hanwoo (Korean beef) Suyuk to Hanwoo Yukhoe and Dotjeyuk, Chilled Suyuk with Vinegar Dressing, mandu and a seasonal pancake. Add one or two according to the size of your party and your taste, then close with naengmyeon, and the meal follows the flow of Seonju Humyeon (a drink first, then noodles) as a fuller table.

Hanwoo Suyuk

Suyuk (boiled beef slices) that lets you taste the plain character and the aroma of Hanwoo itself. It is not assertive, so it sits naturally beside Pyeongyang Naengmyeon, and it suits Seonju Humyeon, where a drink comes first and naengmyeon closes the meal.

Hanwoo Yukhoe

Yukhoe that keeps the nutty, soft taste of fresh raw Hanwoo. It is a dish to share lightly before the naengmyeon, or to have with Korean liquor.

Chilled Suyuk with Vinegar Dressing

A cold dish of chilled suyuk and vegetables eaten with a mustard sauce. The mild suyuk meets the crisp texture of the vegetables and the sharpness of the mustard, which gives it a character of its own next to ordinary suyuk.

Dotjeyuk

Jeju black pork, boiled and served cold. Dot is an old word for pig, and the mild taste and soft texture sit well with naengmyeon.

Seogwan Mandu

Mandu steamed with a filling of pork and fresh vegetables packed in. We prepare a full plate for sharing among several people and a half plate to go lightly alongside naengmyeon.

Pancakes That Change with the Season

In the warmer months we serve Mokdan Buckwheat Pancake, Jeju buckwheat and cabbage fried together, and in the colder months Nokdu Bindaetteok, a mung bean batter with pork and vegetables. Having the pancake of the season with a drink and then closing with naengmyeon is good too.
