Matbagi Naengmyeon is Seogwanmyeonog's Pyeongyang Naengmyeon served with a generous layer of Hanwoo (Korean beef) and pork. The noodles, milled and made the same day from 100% Jeju buckwheat, and the deep Hanwoo broth stay the same, while the meat and the garnish shift the taste and texture of the bowl.

Matbagi Naengmyeon started from the idea of a single bowl of naengmyeon that lets you follow Seonju Humyeon (a drink first, then noodles) on its own. So that you can have a drink alongside the noodles without ordering a separate meat dish, we lay on twice the usual amount of every garnish.

How Is It Different from Pyeongyang Naengmyeon?

The largest difference is the amount and the make-up of the garnish.

Where Pyeongyang Naengmyeon centers on the mild balance of Jeju buckwheat noodles and Hanwoo broth, Matbagi Naengmyeon builds on the same noodles and broth and adds Hanwoo and pork generously on top, so that the taste and texture of the meat come with it. Try the garnish on its own, or together with the noodles. With a drink alongside, you can start with the meat and move on to the noodles from there. We bring extra broth in a separate bowl, so you can have as much of it as you like.
