How to Enjoy

Twenty Guests a Day: How Do You Enjoy Seogwan Myeonsang?

Seogwanmyeonog Naengmyeon Lab

Seogwan Myeonsang is Seogwanmyeonog's full table setting, a reading of the Joseon era myeonsang, a table set around noodles, in the dining of today. Rather than stopping at one bowl of naengmyeon, it brings meat and pancake, vegetables and kimchi and a dessert to a single table.

Seogwan Myeonsang is Seogwanmyeonog's full table setting, a reading of the myeonsang (a table set around noodles) of the Joseon era in the dining of today. Rather than stopping at one bowl of naengmyeon, it brings meat and pancake, vegetables and kimchi and a dessert to a single table, so that you can taste what Seogwanmyeonog has in mind when it sets a naengmyeon table.

Twenty guests a day. Seogwan Myeonsang is a concept we have carried since the early days of Seogwanmyeonog, and a menu that did much to make the restaurant known.

What Comes on the Table?

We put the season of today on a Joseon table. In the Joseon era too there were settings that gathered several dishes around noodles. Seogwanmyeonog starts from that form, and rather than reproducing an old table as it was, adds the season and the ingredients of today to the way several dishes are enjoyed around noodles.

Seogwan Myeonsang is made up of eight kinds of dish: naengmyeon, a main meat dish, a pancake, a salad or vegetables, a blanched vegetable dish or a steamed dish, a seasonal kimchi, a dessert and a drink. The frame stays the same while we look through spring, summer, autumn and winter for local ingredients in season and change the dishes within it. Keeping naengmyeon at the center and showing the present season through the dishes around it is what marks Seogwan Myeonsang.

Why We Set Only Twenty Tables a Day

Seogwan Myeonsang has been limited to twenty guests a day from the start. It is a setting composed so that you can experience not only our naengmyeon but meat and pancake, seasonal dishes and dessert at one table, and planned so that anyone can meet the food and the thinking of Seogwanmyeonog without hesitation. In the early days those twenty settings were how many people first came to know the brand, and the dish has long stood as one of the menus that represent Seogwanmyeonog.

From October, at Every Seogwanmyeonog

Until now, Seogwan Myeonsang could be found only at Gyodae Main Branch and Hongdae Branch. From October 2026 we are extending it to Gyodae Main Branch, Hongdae Branch, Shinsegae Main Store and Samseong Branch, every Seogwanmyeonog. The way we look for local ingredients at their peak in each season and set a new table carries on unchanged.

Frequently Asked Questions

Why is Seogwan Myeonsang limited to twenty guests a day?
It was planned from the early days as a table for twenty guests a day, so that our naengmyeon and a range of other dishes could be experienced together at one setting. We still keep to that way of serving a carefully prepared table to a set number of guests each day.
Is the Seogwan Myeonsang menu always the same?
No. The basic composition of the table stays the same, while the dishes within it are renewed each season with local ingredients at their peak.
Which branches serve Seogwan Myeonsang?
From October 2026 you can find it at every Seogwanmyeonog, not only Gyodae Main Branch and Hongdae Branch but Shinsegae Main Store and Samseong Branch as well.
